#66 CHECK!!!!! - Chunky Chili

So, I've been in the holiday party spirit with all the parties we've been having in our beautiful new home.  With each party, I've been stepping out of the box and trying some new meals.  It's awesome because it's helping me check off #58 - Cook 10 new dishes.  I was so busy keeping track of my new meals that I didn't even realize I had checked off...

66. Make a crock-pot dinner

Officially, I checked this off with the last meal I posted, but I figured I would officially check it off with the meal I made for Christmas Eve.  This one was a big hit and I liked it a lot better than my previous crock pot meal.  Here's the awesome recipe (complete with Weight Watchers points thanks to the recipe builder on Weightwatchers.com):


Chunky Chili

PointsPlus Value: 8 points per serving
Servings: 4 (1 1/4 cup per serving)
Preparation Time: 30 minutes
Cooking Time: 5-6 hours
Level of Difficulty: Easy

Ingredients
  • 1 pound ground turkey (93%)
  • 1 medium onion (chopped)
  • 1 tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 2 cans (16 oz) diced tomatoes
  • 1 can (15 oz) pinto beans (drained and rinsed)
  • 1/2 cup prepared salsa
Instructions:
Heat large skillet over medium heat. Add beef and onion, cook until beef is browned and onion is tender. Drain fat.


Place beef mixture, chili powder, tomatoes, beans and salsa in slow cooker; stir. Cover; cook on LOW 5 to 6 hours or until flavors are blended and chili is bubbly. Season with salt and pepper to taste. Serve with cheese, onions, and olives (if you choose).

Scoop up and enjoy!  If you like your chili with a little more kick, add some more chili powder.  That's definitely what I will be doing next time.  Otherwise, it's delicious.  And it's the crock pot so you dump everything in there and then you don't have to worry about it until it's time to eat.  Excellent!!!
